I don't know how you guys feel about this but I make alot of this and send out as gifts to friends and family. My son Trevor loves this recipe and asked me to send him some when he was on deployment last christmas. I soon after got several requests from him to send this along so I figured I would share with my fellow Navy Parents. this is a fast and easy thing to do.
10 MINUTE NEVER FAIL MICROWAVE PEANUT
BRITTLE
1 c. sugar
1/2 c. light corn syrup
1/2 c. raw or roasted peanuts or any nut of your choice
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 2 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 4 minutes. Add butter stir. Microwave on HIGH 2 minutes 15 seconds. Brittle should not get too brown. Stir in vanilla and butter. Microwave on High for 1 minute 15 seconds. Add baking soda and stir until light and foamy.
Spread on buttered baking sheet for thin or into round cake pan for thicker Brittle. Cool. Break into pieces. My microwave is a 900 watt microwave. you can adjust the times for the wattage on your microwave. Shorter times for higher wattage longer times for lower wattage.
INGREDIENTS
1 (18.25 ounce) package any cake mix or homemade
8 straight-sided wide-mouth pint canning jars with lids and rings
NOTE: It took me 2 boxes of cake mix to get 8 jars !!!!
DIRECTIONS
1. Prepare the cake according to package instructions, or use any cake recipe.
2.In pint size, wide-mouth jars, put 1 cup of batter( I fill jar half way) in each greased jar. Make sure to keep the rims of the jars clean. Put in preheated oven 350 degrees F (175 degrees C). Place jars on a cookie sheet to keep from tipping over while baking.
3. Bake for 30 to 35 minutes, or until a toothpick inserted into cake comes out clean.
4. While they are baking, have your jar lids boiling in a pan of water. When the cake is done, take one jar out at a time and add the hot lid and screw on your jar ring and let set and cool.
5. It will seal as it cools. Place the jars on the counter and listen for them to 'ping' as they seal. If you miss the 'ping', wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
6. After it cools it will pull away from the jar and when you are ready to eat, open and pop out the cake and enjoy.
7. Unsealed jars should be stored in the refrigerator and eaten within 2 weeks. Sealed jars may be stored in a freezer.
If mailing to your sailor make sure to wrap well. bubble wrap,newspaper even clothes work. Decorate the jars for the occasion. Put the frosting and other deco. in the box. You may want to throw in plastic fork. Dont forget to send extra they LOVE TO SHARE the goodies from home!!!!
